iOS: Fix simulator build issues after moving conditionals out of mkspecs

We were overwriting QMAKE_IOS_CFLAGS and QMAKE_IOS_OBJ_CFLAGS in
clang.conf, so the simulator specific -fobjc-abi-version=2 option was
not set during compilation, resulting in undefined symbols such as
.objc_class_name_NSObject when linking against the simulator SDK.
